Serve with a side salad for a veggie packed lunch!
Creamy Potato Leek Soup

4 servings
¼ coconut oil
2 leeks, sliced thinly and cleaned thoroughly
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 tablespoon cornstarch
4 cups vegetable broth
2 large Yukon gold potatoes, peeled and diced (abt 4 cups)
Salt and freshly ground black pepper
INSTRUCTIONS
Melt the coconut oil in a large pot over medium heat. Cook the leeks in oil with salt and pepper, stirring frequently, about 15 minutes. In a bowl, whisk the starch into 1 cup of the vegetable broth until it has dissolved, making sure there are no lumps. Pour the starch mixture and remaining stock into the pot.
Add the potatoes and bring to a boil. Lower the heat to low and simmer, partially covered, for about 20 minutes, or until the potatoes are fork-render.
Working in batches, place about ⅓ of the soup in a blender. Put the lid on but remove the bap, and cover the hole with a kitchen towel. Blend until creamy and smooth. Repeat with rest of the soup.
Add more salt and pepper to taste, and serve.
